Because leaves also have different coloured pigments, along with the chlorophyll (green), in them.
Explanation:
All plants (with very rare exceptions) contain chlorophyll to help them photosynthesize and gain energy. Chlorophyll is green, but many leaves have other pigments in them too, such as carotenoids (yellow/orange) and anthocyanins (red). This is why many plants have leaves that are different shades of green.
Additionally, some plants are completely different colours, like red or dark purple. These plants contain chlorophyll too, but the pigment just "overrules" the green.
