Proteins are made up of amino acids, polysacccharides are made up of sugrs

Explanation:

Proteins are made up of small molecules know as amino acids. ![http://www.compoundchem.com/2014/09/16/aminoacids/](useruploads.socratic.org)
A lot of these amino acids are linked together with a peptide bond to form a protein(see next image)![oregonstate.edu)
The amino acids in the protein make different substructures, like alpha helices and beta sheets. These structures of amino acids are combined to form a protein with a distinct shape (which is important for its function)

Polysachharides are essentially a lot of sugars (monosaccharides) linked together with glycosidic bonds. One of the most well known polysaccharides is cellulose. Cellulose is made up of lots of linked glucose molecules. ![https://myorganicchemistry.wikispaces.com/Cellulose](useruploads.socratic.org)

Most polysaccharides are used as either structural elements of organisms (like chitin and cellulose), whilst other polysaccharides are used to store energy for later use (like glycogen and starch)
