They make dialogue seem more authentic.
Explanation:
One can easily avoid using contractions in an expository paragraph. Dialogue, characters speaking to one another on the written page, is a different matter. People use contractions in their speech, and to avoid doing so comes across as stilted and inauthentic, two qualities any serious writer wants to avoid.
