How do you create assonance in a poem?

Assonance occurs when various words in a line have similar vowel sounds.
You could say,
"the sheep sleep, despite how their barn reeks." sheep, sleep, and reek all have the "EE" sound in them.
then there's the famous,
"the fat cat sat on the mat." fat, cat, sat, and mat have the "AH" sound.
"I feel free, drinking my tea, sweetened with the gift of a honeybee" more "EE's"
"After that cold I caught, I bought a lot of vitamin C"
there are still "AW" sounds here, so it is still assonance, even though the ending of "vitamin C" does not rhyme.
