How can we extract vinegar or acetic acid from coconut water?
Coconut has a lot of acetic acid . I tried to test it using sodium bicarbonate but it was of of no use.

Coconut and coconut water contains no acetic acid, so you cannot extract it.....
Explanation:
Coconut water does not contain any acetic acid, so it is not possible to "extract" acetic acid from coconut water. Coconut water is 95% water, and around 2.5% of naturally occurring sugars. It can, however, be fermented to ultimately form "coconut vinegar", the total time required is about 6 weeks or so.
There is a number of websites in the public domain giving the procedure for doing this fermentation.
Please note that there is a very large difference between "acetic acid" and "vinegar". Vinegar is mainly water, and only contains around 4 - 5% of acetic acid.
