If we bury organic matter deep enough, would it produce fossil fuels?
And is there any project you know of doing it already?

No
Explanation:
It is not enough to bury organic matter to produce fossil fuels. There must be necessarily reductant microorganism that take away the atoms of oxygen from organic compounds. This can happen in the deep earth, but also in landfills (where we must collect the methane produced), in the plants of treatment of waste water, expecially in the biologic digestors.
