Is it healthy to only eat breakfast and afterwards only drink water during the day?

That is not healthy at all! Your body needs to be nourished throughout the day. Yes, breakfast and water are great; however, you need to be eating breakfast, lunch, dinner, and small snacks or meals in between! Your body goes through tons of reactions and needs the fuel. It is highly not recommended to only have breakfast and water as a diet.
Note: this is different from fasting. Because when you fast you have something to eat then abstain from food (some fasts allow drinks) until a certain time in the day then you eat again; thus, breaking the fast. That's different because you still end up eating again the same day and not continuing on to the next!
