Casein
Casein is the most abundant protein in milk. It is relatively insoluble and tends to form structures called micelles that increase its solubility in water.
As a food source, it supplies amino acids, carbohydrates, and the two inorganic elements calcium and phosphorus.
Hemocyanins
Hemocyanins are respiratory proteins. They carry oxygen in the "blood" of most molluscs, and some crustaceans. They are not bound in blood cells but are instead suspended directly in the circulatory fluid.
Hemocyanins contain two copper atoms that bind a single oxygen molecule. The deoxygenated Cu(I) form is colourless, and the oxygenated Cu(II) form is blue.
