Analytical chemistry is the study of analytes in great depth and precision. Separating, identifying, and quantifying matter is of interest to analytical chemists.
Organic chemistry is the study of reactions between carbon-containing species. It's probably the most intuitive field of chemistry, and a great deal of attention is paid to reaction kinetics, thermodynamics and mechanisms. Synthesis of organic compounds are very popular these days.
