The digestion of the food consumed is finished in the small intestine. In small intestine there are a large number of finger like projections called villi. Villi absorb the digested nutrients into the blood.

The small intestine is the organ in which most of the absorption of food molecules happen. This is because villi reside on the small intestine, and they look like hairs. They increase the surface area of the intestine to help the rate of absorption become faster. On villi are microvilli, which further increase the surface area.
After absorption, assimilation takes place in there as well, where food molecules become part of cells and other tissues.
